This is what makes the ORO di Parma tomato paste such essential ingredient in Italian cuisine. Because our tomatoes can ripen in the powerful Parma sun before we concentrate them two or three times. You can fry the tomato paste in the pan with other ingredients, or use it to thicken, concentrate and intensify sauces.
